Oven-Baked Potato Croquettes
Mash of 4 potatoes
1 egg yolk
2 whole eggs
1/3 C breadcrumbs
2 T grated Parmesan
1 t dried mixed herbs e.g. parsley, rosemary, salt, pepper
Olive oil spray

Preheat oven to 200°C. Mix mash with egg yolk. Roll into croquettes (logs = 6 large or 12 small). In another bowl, beat whole eggs lightly with fork, season. In another bowl, combine breadcrumbs, Parmesan and herbs. Dip croquettes into egg then roll in breadcrumbs. Place on baking tray and spray. Bake 20 mins until crisp and browned.
