Linguine with Bacon, Mushrooms and Peas
3 bacon rashers, trimmed and chopped
2 t olive oil
3 garlic cloves
1 red onion, chopped
185g field mushrooms, sliced
2 t chopped fresh parsley
½ C peas
1 ½ C low-fat light evaporated milk
2 t cornflour + 1 T water
325g linguine
25g Parmesan shavings

Put pasta on to cook in pan of boiling salted water. Heat oil in pan, add garlic, onion, bacon, low heat 5 mins. Add mushrooms and cook stirring 5 mins. Add parsley, peas, milk. Add cornflour mixture and stir over medium heat until slightly thickened. Drain pasta and serve with hot sauce and Parmesan shavings.
