Potato, Herb and Olive Oil Stacks

4 large potatoes
75 ml olive oil, plus extra for greasing
2 T roughly chopped rosemary
1 T roughly chopped thyme
Salt and pepper
Preheat oven to 180°C. Slice potatoes ~2mm thick. Put into bowl and add other ingredients. Toss well with hands until evenly coated. Brush baking paper with a little olive oil and build 8 stacks of potato slices, looking as random as possible and including herbs. Sprinkle any remaining herbs and olive oil from bowl over stacks. Bake 35-45 mins or until golden brown at edges and cooked through. Skewer test would work.
