Cheese and Chilli Bread

15 g dried yeast
400 ml tepid water
4 small chillies, finely sliced
4 shallots, finely sliced
500g plain flour
240 g tasty cheese, grated
1 T sambal oelek
2 t salt
1 T olive oil
½ t sugar
Egg + little water/milk (?eggwash?)
Preheat oven to 190°C. Mix yeast with water, allow to prove 10 mins. Combine remaining ingredients except eggwash, stir in yeast mixture, prove, covered, until doubled in size. Knock back dough and place in oiled bread tin. Leave until dough fills tin. Brush top with eggwash and bake 30-40 mins.
