Low-Fat Chips
700 g potatoes
1 L boiling stock (meat or vegetable)
2 T vegetable oil
Paprika

Preheat oven to 220°C. Cut potatoes into thick chips, plunge into pan containing boiling stock and cook 5 mins, until just tender. Drain in colander, allow to cool slightly. Put oil in large bag and carefully toss chips. Transfer to tray, bake 10-15 mins, turning once or twice. Sprinkle with paprika.
