Potato Muffins

2 C mashed potatoes
1 egg
1/3 C oil
1 C grated cheddar cheese
1 2/3 C flour
3 T sugar
2 T chives, chopped
1 T dried parsley
1 T baking powder
1 t salt

Preheat oven. Into mashed potatoes, beat egg, cheese and oil. Combine other ingredients, stir into potato mixture until just moistened. Fill muffin cups ¾, bake 20-25 mins.

Try without the sugar!!!!!!!!!!!!
