Pumpkin Curry

Peanut oil
2 cloves garlic
2 chillies, chopped
1 onion, sliced
1 t red curry paste
1 butternut pumpkin, diced
2 cans coconut cream (max)
Little lime juice
Little fish sauce
Coriander leaves
Saut? oil, garlic, chillies, onion. Add curry paste and stir until fragrant. Add pumpkin and stir to coat with sauce. Gradually add coconut cream as each amount reduces in pot. Cook until tender (~10 mins). Add lime juice and fish sauce and mix. Add coriander then serve.
