Microwave Chicken with Asian Flavours
1 red onion, cut into chunks
1 red capsicum, seeded, ribs removed & cut into chunks
1 celery stalk, cut into chunks
2 skinless chicken breasts, cut into chunks
soy sauce
a good splash of oyster sauce
a good splash of hoisin sauce
1 tspn sambel oelek
kitchen plastic wrap
a good handful of baby bok choy leaves, cut in half if need be
steamed rice
2-3 spring (green) onions, sliced
1 red capsicum, seeded, ribs removed & cut into chunks

a good handful of baby bok choy leaves, cut in half if need be
steamed rice
2-3 spring (green) onions, sliced
Place onion, capsicum, celery and chicken in a microwave-proof bowl. Add a little soy, oyster sauce, hoisin and sambel. Toss well, cover with plastic and pierce a few times with a fork. Then cook in the microwave on 100% for 4 mins. Add bok choy and a little more soy. Re-cover, pierce again and cook for about another 5 mins. Serve on rice garnished with spring onion.
