Pumpkin Soup
¼ t oil
1 diced onion
4 chopped shallots
3 C peeled and cubed pumpkin
2 medium peeled and cubed potatoes
4 C chicken stock
Pinch nutmeg
Pepper
Parsley, finely chopped

Heat oil in large saucepan, saut? onions and shallots, add rest of ingredients except parsley and simmer with lid on for 15 mins, until soft. Cool slightly and puree until smooth. Serve with parsley.
