Baked Sausage, Cheese and Potato Casserole
12 chat potatoes, scrubbed well
1 tbsp olive oil
2 onions, chopped
3 rindless bacon rashers, sliced
2 garlic cloves, crushed (optional)
3 large sausages, cooked & sliced on the diagonal (peeled if necessary)
melted butter
freshly ground salt & pepper
grated tasty cheese

Preheat oven to 200°C. Cook potatoes in plenty of water until just tender. Drain well and cut in half lengthways. Saut? onion, bacon and garlic in oil until soft, and then mix in sausages. At the same time, brush an ovenproof dish with melted butter and put a layer of potatoes on top. Then season lightly, spread onion mix over potatoes and layer with plenty of cheese. Cook in oven for about 15 mins, until cheese is melted and golden.
