Beef Rougaille

vegetable oil
750 gm stewing steak, well trimmed & finely sliced
2 large red onions, finely sliced
2 tbsp freshly grated ginger
4 garlic cloves, crushed
2-3 chillies, finely sliced
½ cup beef stock or water
a splash of soy sauce
2-3 ripe medium tomatoes, cored & cut in wedges
3-4 tbsp mixed chopped herbs (coriander, parsley & thyme)
3 spring (green) onions, finely sliced
Heat oil in a large non-stick pan and seal meat. Remove and set aside. Add onions, ginger, garlic and chillies and gently saut?, continually stirring and adding more oil if needed. Then add stock, soy and tomatoes. Stir and rapidly simmer for about 10 mins until tomatoes collapse. Add herbs to sauce, together with sliced beef. Toss well and cook for a few minutes. Serve with steamed rice or mashed potato
