4 medium potatoes, scrubbed well

Preheat oven to 220°C. Season potatoes, prick with a fork and wrap in lightly oiled foil. Cook in oven until tender. Blanch sausages in plenty of simmering water until firm to the touch. Drain well and separate. Then heat a layer of oil in a non-stick pan and fry sausages (or grill). When almost ready, gently saute onions until golden. Cut potatoes in half through the top, leaving a little attached at the bottom. Then top with caramelised onion, a sausage, chutney and cheese. Cook under preheated overhead grill until cheese is golden and bubbling.
