Chilli, Chicken and Cheese Soup
1 tbsp olive oil
4 chillies, seeded & finely sliced
4 garlic cloves, crushed
1 large onion, chopped
6-7 medium potatoes, peeled & neatly cubed
5 cups chicken stock
2 cans diced tomatoes, drained a little
freshly ground salt & pepper
2 large skinless chicken breasts, cubed
3 tbsp freshly chopped parsley
a few handfuls grated tasty cheese

Heat oil in a large pot and gently saute chillies and garlic. Add onion, potatoes, stock, tomatoes and seasonings. Mix well and gently cook for about 15-20 mins until potatoes are tender. Then add chicken, turn heat right down, mix and gently simmer for about another 15 mins. When ready, stir in parsley and cheese. Turn heat off and stir until cheese has melted. Taste for seasoning. Serve in large bowls with a simple green salad and/or crusty bread on the side.
