Chocolate Chip Cookies

1 cup well packed brown sugar
125 gm stick butter, softened & cubed
1 tspn vanilla essence
1 egg, lightly beaten
225 gm plain flour, sifted
1 tspn baking powder
1 tbsp milk
250 gm dark chocolate chips
cooking oil spray
baking paper
Preheat oven to 175°C. Place sugar and butter in a bowl and cream with a hand mixer. Add vanilla and gradually add egg, beating well. Then add flour and baking powder, and fold in with a wooden spoon until well mixed. Fold in milk and then chocolate. Lightly oil a baking tray and top with baking paper, pressing down corners. Then drop level tablespoons onto baking tray, leaving about 4 cm between each one. Lightly press down tops with a floured fork and cook in oven for about 15 mins until golden brown. Allow to cool on a rack before serving.
