Crash Hot Potatoes

4 small-medium potatoes, scrubbed
freshly ground salt & pepper
olive oil spray
fennel seeds
thyme leaves
Preheat oven to 200°C. Cook potatoes in lightly salted, boiling water until fairly tender when tested with a skewer. Drain well. Place potatoes on a lightly oiled baking tray and squash with a potato masher until they are about twice the size. Then spray with oil and sprinkle with seasonings, fennel seeds and thyme. Cook on the top shelf of oven for about 20-25 mins until crisp.
