Jeremy's Apple Cake
175 gm plain flour
100 gm caster sugar
1 tspn cinnamon
125 gm unsalted butter, cubed
1 kg Pink Lady or Fuji apples
thickened cream or ice cream

Preheat oven to 200°C. Using your hands, combine together flour, caster sugar, cinnamon and butter, until it resembles fairly coarse breadcrumbs. Peel apples and cut in quarters. Then cut out cores and cut in 4 again. Add ¾ of the crumb mix and combine. Then generously butter a springform cake tin. Fill with apple mix and sprinkle rest of crumbs on top. Tap on bench to settle contents and cook in oven for about 40 mins. Cool slightly before turning out and serving with a dollop of cream or ice cream.
