Baby Fruit Cakes
150 gm unsalted butter
300 gm currants
300 gm sultanas
180 gm brown sugar
1 cup water
1 tspn each ground cinnamon, ground ginger & mixed spice
1 tspn bicarb of soda
2 eggs, lightly beaten
150 gm each plain & self-raising flour
cooking oil spray

Preheat oven to 180°C. Combine butter, currants, sultanas, sugar, water, spices and bicarb in a pot. Bring to the boil, continually stirring, turn heat off and allow to cool. Then transfer mixture into a large bowl, add eggs and mix well. Sift in flours and mix well with a wooden spoon until combined. Spray large muffin tins with oil and spoon mixture into each one. Cook in oven for about 30 mins until a skewer comes out clean. Allow to cool before removing from moulds and serve with a little caster sugar sprinkled on top.
