Corn, Chicken and Chive Soup

Cooking spray
250g chicken breasts, in strips
6 shallots, chopped
1 C drained corn kernels
8 C chicken stock
3 T cornflour
2 T water
1 bunch chives, sliced
Coat pan with spray, cook chicken strips and shallots until cooked. Add stock and corn, simmer covered 5 mins. Mix cornflour and water and add to soup, cook 1 min or until thickens slightly. Stir through chives to serve.
