Old Fashioned Apple Pie

6-8 large Granny Smith apples
juice of 1 lemon
¼ cup brown sugar
½ cup raisins
2 tspn vanilla extract
1 tspn ground cinnamon
¼ cup plain flour
3 tbsp unsalted butter
1 sheet of puff pastry
1 egg
2 tbsp milk
caster sugar
vanilla ice cream or cream
Preheat oven to 170°C. Core, peel and slice apples. Then put in a bowl and toss with lemon juice. Add brown sugar, raisins, vanilla, cinnamon and flour and mix well, until apples are well coated. Then pack into an ovenproof dish. Dot with butter and place pastry on top. Cut around edge of the dish, poke 2-3 slits on top and brush with eggwash (mixture of egg and milk). Then generously sprinkle with caster sugar and cook in oven for about 35 mins, keeping an eye on it. (If pastry is cooking too fast, cover with foil.) Serve warm or cool, with a little more caster sugar sprinkled on top and ice cream or cream on the side.
