Spicy Chicken and Vegetables
vegetable oil
8 boned chicken thighs
plain flour
freshly ground salt & pepper
1 onion, chopped
2 celery stalks, diced
2 carrots, chopped
1 leek, sliced
1 garlic clove, sliced
½ tspn turmeric
½ tspn ground cumin
1 tspn paprika
1 cinnamon stick
1 heaped tspn sambal oelek
4 canned tomatoes, drained & chopped
2 cups chicken stock
8 boned chicken thighs

2 cups chicken stock
Heat oil in a large pan, flour chicken, seal and season. Set aside and pour off most of the oil. Then gently saut? onion, celery, carrots, leek and garlic in pan until soft. Add turmeric, cumin, paprika, cinnamon and sambal oelek. Mix well and add tomatoes and stock. Then add a bit of salt and return chicken to pan (don't bury meat). Cover tightly and simmer gently for 15-20 mins. Check seasoning.
