Vanilla Slice

2 sheets bought puff pastry
1 cup caster sugar
90 gm cornflour
60 gm custard powder
1 litre cream
2 tspn vanilla essence
75 gm unsalted butter
3 egg yolks
1½ cups icing sugar
¼ cup passionfruit pulp
Preheat oven to 210°C. Spray two baking sheets and put a pastry sheet on each. Prick all over with a fork and cook both sides. Then flatten a bit with a tea towel and set aside. Off heat, put sugar, cornflour and custard powder in a pot and whisk, gradually adding cream until smooth. Then put on a medium heat, bring to the boil and cook for about 2-3 mins until it thickens, whisking constantly. Add vanilla and 60 gm cubed butter and stir until smooth. Then remove from heat, add yolks and mix well. Spread vanilla mixture on one pastry sheet and place the other sheet on top. To make icing, whisk icing sugar, passionfruit pulp and 15 gm melted butter until smooth. Then spread over the top of pastry sheet. Set aside to cool and then cut with a serrated knife.
