Potato, Broccoli and Coriander Soup

500g broccoli florets
Cooking oil spray
2 onions, finely chopped
2 cloves garlic
2 t cumin
1 t ground coriander
750g potatoes, cubed
2 small chicken stock cubes
1 ½ C skim milk
3 T fresh chopped coriander
Salt and pepper
Lightly spray base of large saucepan, heat and add onion and garlic. Add 1 T water to prevent sticking. Cover and cook over low heat 5 mins until onion softened and golden. Add cumin and coriander 2 mins. Add potato and broccoli, stir, add stock cubes and 1 L water. Slowly bring to boil, reduce heat, cover and simmer low heat 20 mins until vegetables tender. Allow to cool slightly. Blend soup in batches in food processor until smooth. Return to pan and stir in milk. Slowly reheat without boiling. Stir through chopped coriander and season well.
