Potato and Pea Curry
750g potatoes, peeled
2 t brown mustard seeds
2 T ghee/oil
2 onions, sliced
2 cloves garlic
2 t ginger
1 t turmeric
salt and pepper
½ t chilli
1 t cumin
1 t garam masala
½ C water
2/3 C peas
2 T chopped mint

Cut potatoes into large cubes. Heat mustard seeds in dry pan until start to pop. Add oil, onions, garlic, ginger, stirring until soft. Add turmeric, salt and pepper, chilli, cumin, garam masala, potatoes, stir until potatoes coated. Add water and simmer covered 15-20 mins until tender. Add peas, stir, simmer covered 3-5 mins until cooked and liquid absorbed. Stir in mint and serve.
