Potato, Carrot and Tuna cakes
400g potato, chopped
200g tuna, drained
2 shallots, finely chopped
2 small carrots (40g), grated
2 T finely chopped parsley
2 t grated lemon rind
plain flour
1 egg, lightly beaten
1 C dry breadcrumbs
oil

Cook and mash potato. Mix tuna, shallots, carrot, potato, parsley, lemon. Form 4 flat patties, coat in flour, shake off excess, dip in egg, cover in breadcrumbs. Heat oil in pan and fry until golden brown and heated through. Drain and serve.
