Healthy Potato and Leek Soup
Cooking oil spray
2 leeks, white part only, sliced
3 cloves garlic
1 t cumin
1 kg potatoes, chopped
1.25 L vegetable stock
½ C skim milk

Lightly spray frypan. Add leek, garlic, 1 T water, cook low heat stirring, 25 mins or until leek lightly golden. Add cumin 2 mins. Put potato in large pan with leek mixture and stock, bring to boil, reduce heat, simmer 10-15 mins until tender. Puree in food processor until smooth, return to pan. Stir in milk, season, heat through before serving.
