Poached Chicken with Soy, Ginger and Shallots

2 T soy sauce
1 T dry sherry
2cm ginger
¼ C coriander
5 shallots, finely sliced
1 L chicken stock
4 chicken breasts
In large deep pan, bring to boil the soy sauce, sherry, ginger, coriander, 2/3 of shallots, stock. Add chicken, reduce heat and simmer 12 mins. Remove from heat and let sit 5 mins. Slice chicken thickly and serve, pour over it a little liquid and top with remaining shallots. Serve with rice.
