Meatballs in Tomato and Basil Sauce
700g mince
2 eggs
¼ C tomato paste
1 T oregano
1 onion, finely chopped
2 T parsley
2 T olive oil
1 t olive oil
1 clove garlic
2 T chopped red capsicum
2 x 400g tin tomatoes
½ C beef stock
Pepper
¼ C basil

Meatballs - mix mince, eggs, paste, oregano, onion, parsley. Roll tablespoonfuls into balls and set aside. Heat oil over high heat, cook half meatballs per time, 8-10 mins, remove and drain. Sauce - heat oil, add garlic and capsicum 3 mins. Add tomato and stock, reduce heat to low and simmer 5 mins. Add pepper to taste, basil and meatballs and simmer further 8-10 mins.
