Easy Shepherd's Pie
700g potatoes, peeled and cubed
2 t butter
80 ml milk
½ t nutmeg
Salt and pepper
500g mince
2 t oil
1 onion, chopped
2 cloves garlic
1 carrot, grated coarsely
300 ml beef stock
½ t mixed herbs
2 T breadcrumbs
1 T grated parmesan cheese

Preheat oven 180°C. Cook potatoes and mash with butter, milk, nutmeg, salt and pepper, set aside. Heat pan, cook mince 5 mins until brown, remove. Heat oil and cook onion, garlic, carrot 5 mins until soft. Add mince, stock, herbs, salt and pepper 10 mins until meat cooked and liquid reduced. Spoon meat into casserole dish, cover with mash, sprinkle over breadcrumbs and cheese, bake few minutes until golden brown. Serve with vegetables.
