Frozen Christmas Pudding

1 ½ C mixed dried fruit (with cherries)
½ C chopped nuts
¼ C chopped glace ginger or pineapple
½ C sweet sherry
450g vanilla icecream
450g strawberry icecream
1 C blueberries
Mixxed berries to serve
Combine dried fruit, nuts, ginger/pineapple, sherry in bowl, cover and soak overnight. Allow vanilla icecream to soften for approx 10 mins, place in large bowl and fold in soaked fruit. Pour into dish, flatten top and freeze until firm. Allow strawberry icecream to soften and fold through blueberries. Spoon over vanilla mixture and press down, freeze until ready to use. To serve, dip quickly in hot water and upturn onto plate. Serve decorated with mixed berreis.

Can make into individual mounds too.
