Winter Chicken Soup

2 T olive oil
2 rashers bacon, finely chopped
2 white onions, finely diced
1 carrot, grated
1 bay leaf
2 potatoes, peeled and diced
3 celery stalks, finely sliced
2 chicken breasts, small cubes
1 ½ L chicken stock
Salt and white pepper
Saut? onion and bacon with olive oil until browned, add carrot, bay leaf, potatoes, celery 1 min stirring. Add chicken, stock, simmer 30 mins, season and serve.
