Cabbage, Bacon and Potato Soup
1 T olive oil
1 onion, finely chopped
250g shortcut bacon, chopped
½ cabbage, shredded
2 potatoes, peeled, 1cm cubes
6 C chicken stock
Salt and pepper

Heat oil, cook onion and bacon 3 mins until soft. Add cabbage and potatoes 2 mins. Add stock and bring to boil. Reduce heat and simmer uncovered 15 mins until potato tender. Season.
