Sweet Potato and Leek Patties
900g sweet potato
4 t oil
2 leeks, finely chopped
1 garlic clove
2.5 cm ginger
200g can sweetcorn, drained
2 T low-fat natural fromage frais (unsweetened yoghurt)
60g wholemeal flour
Salt and pepper

Peel and chop potatoes into 2cm pieces. Boil 10-15 mins, mash, leave to cool. Heat 2 t oil and fry leek, garlic, ginger 2-3 mins. Mix together leek mixture, potatoes, corn, seasoning, yoghurt. Form into 8 patties and toss in flour. Chill 30 mins. Preheat grill. Place patties on grill rack and cook 5 mins each side, brushing with oil when turning. Drain.
