Apple Pancakes
½C SR flour
2T caster sugar
½t cinnamon
1 egg, beaten
1/3C milk
2 green apples, peeled, grated
oil or cooking spray
yoghurt or icecream, to serve
Combine flour, sugar, cinnamon then add egg and milk, whisk until smooth.
Stir in apples.
Heat and oil pan and cook 10cm round pancakes by pouring small amounts then spreading out with back of spoon.
Serve with yoghurt or icecream.
