Cheese, Celery and Bacon Scones

250g SR flour pinch salt pinch sambal oelek or chilli pinch mustard powder 60g butter 60g cheddar cheese, grated 30g parmesan cheese, grated 1 stick celery, very finely diced 1 rasher bacon, grilled and finely diced approx 1 C milk
Preheat oven 200.  Line a tray with baking paper.  Mix flour, salt, mustard, chilli, and rub in butter.  Stir in cheeses, celery, bacon.  Fold in most of milk, and add remaining if necessary.  Turn out dough onto floured surface and knead then flatten to 3cm.  Cut into squares and place on tray.  Brush tops lightly with milk, bake 12 mins or until golden.  Remove and wrap in tea towel until only warm.  Serve warm with butter.
