Fruit and Nut Bars

1 C figs or apricots, roughly chopped
1 C prunes, roughly chopped
1 C water
1 T cinnamon or mixed spice
½ t bicarb soda
½ C wholemeal plain flour
2 T skim milk powder
½ C rolled oats
½ C almonds, roughly chopped
½ C sunflower seeds
½ C sesame seeds
½ C pepitas
1 egg, lightly beaten



Preheat oven 160.  Line 27x17cm shallow tin with baking paper.
Place chopped dried fruit, water and spices in saucepan, bring to boil then simmer 2-3 mins, covered.  Add bicarb and stir to combine, remove from heat and set aside with lid on.
Sift flour and skim milk powder into large mixing bowl, add oats, nuts, seeds, warm fruit mixture and combine.  Add egg.  Pour into tin, pressing in firmly.  Bake 10-15 mins or until golden brown.  Remove from oven and cool in tin.
