Tomto, Lentil and Vegetable Soup
Mum

1 large chopped onion
1 t crushed garlic
2 large chopped carrots
2 sticks diced celery
1 large potato diced
1 ¼ cups rinsed brown or brown/green lentils
1 ½ litres vegetable stock
3 bay leaves
salt and pepper
2 x 415g cans chopped tomatoes
1 x 410g cans tomato puree


Fry onion and garlic, then add other ingredients.  Cover with water and bring to the boil.  Simmer for 2-3 hours.
