Rice crusted quiche

3 shallots, chopped
2 sticks celery, chopped
5 stalks fresh thyme or handful basil, chopped
2 cloves garlic
salt and pepper
200g cheddar cheese, grated
3 C cooked rice (1 ½ C when raw)
4 eggs
2 T oil
150g salami/ham, chopped
150g sundried tomatoes, roughly chopped

Preheat oven 200c.  Combine rice, ¾ cheese, 1 egg, salt and pepper and press into pie dish.  Heat oil and saute shallots, garlic, celery, thyme.  Combine this mixture with salami/ham, tomatoes, remaining cheese, 3 eggs.  Pour onto base.  Bake 15 mins, remove from oven and microwave elevated ~7-10 mins until just firm.  Stand 5 mins before inverting and serving.
