Potato, Shallot and Cheese Quiche

250g baby potatoes, halved

4 shallots, sliced

1 C grated cheese

1 savoury pastry case

5 eggs

200ml thick cream

½ C milk

salt and pepper

Preheat oven to 160c.  Boil potatoes 10 mins until tender, drain and cool.  Place potato, shallots and cheese in pastry case.  Whisk wet ingredients together, season and pour over.  Bake 40-45 mins, until light golden brown.  Cool 5 mins on wire rack then remove from pan.
