Pecan and Raisin Oat Cookies

1 ½ C rolled oats

½ C coconut

225g plain flour

140g pecans, roughly chopped

110g raisins

140g unsalted butter

220g brown sugar

¼ C golden syrup

2 T boiling water

1 t bicarb of soda

Preheat oven 160c and grease and line baking trays.  Combine oats, coconut, flour, pecan and raisins in bowl.  Heat butter, sugar, syrup in saucepan on medium heat, stirring, for 5 mins until melted and combined, then remove from heat and cool slightly.  Whisk boiling water and bicarb then stir into butter.  Pour butter over oats and stir until combined.  (Can be frozen at this point).  Roll into 18 balls and place 5cm apart on trays, flatten slightly.  Bake 12-14 mins until golden brown.  Cool on trays until firm.
