Indian Chicken

Diced chicken
1 tabs vegetable oil
1 tspn garlic
1 tspn ginger
Small amount of chilli (to taste)
½ tspn cumin
1 tspn garam masala
Salt and pepper
2 tomatoes, roughly chopped
1 sliced capsicum
3 cups chicken stock
1½ cups rice
Brown chicken in oil, add spices and cook them in oil for a few minutes. Add tomatoes and capsicum and cook a few minutes. Add rice and stir in. Add chicken stock. Cook for ¾ hour.
